Thai Fish Cakes for Bubbles
This recipe is from the Symply Too Good books, I haven't made them but my friend has and swears they are delish!

Thai Fish Cakes

makes 12

500g boneless fish
3 level Tbsp cornflour
1 level Tbsp fish sauce
2 egg whites
1/2 cup coriander leaves
1/2 cup chopped shallots
1 cup dried breadcrumbs
4 level tsps red curry paste
2 level tsps sweet chilli sauce
plain flour for coating

Place fish pieces into a food processor and process for a few minutes.  Add all remaining ingredients and process until a reasonably smooth consistency is reached.  Roll into 12 cakes and lightly coat in plain flour.  Generously spray a non-stick fru pan with cooking spray, when hot fry fish cakes until cooked on both sides.  Serve woth extra sweet chilli sauce.

Yes, I have made these a few times and my kids, who don't like fish, yummed them up and asked for more!!!

These are definately worth the effort. I think I was a little disappointed that the kidlets actually liked them, cause then there was less for me

For sure Scotty, but I must admit I was glad, even if it was a cheeky way to get them to devour their fish, LOL..

Mmm, might even make them again in the next couple of days. I have some fish in the freezer. They go really well with fried rice, or on a hot night with the crunchy Asian Salad.

I just love the Symply too good books.  Only got the first few.  Which book is it in?

I shall try them today!  they seem similar to mine, but have a  little more bite I think with the curry paste, chilli sauce (like that) also the fish sauce would add a little extra tase-yum!

Hiya bubbles, the recipe is in book 2.  Let me know how you went.  I am thinking of making them on Tuesday along with another Symply recipe, Pizza Strudel, a real hit in our house.
