Fresh
kefir
grains
travel
very
happily
when
well
packed
for
their
journey.
They
will
work
for
you
as
soon
as
they
are
put
into
fresh
milk
unlike
dehydrated
grains
which
may
take
a
few
days
or
weeks
to
produce
grains
that
you
can
see
.
Kefir
is
a
unique
fermented
milk
drink,
more
correctly
healthy
food,
used
for
generations
in
Asia
and
revered
for
its
health
promoting
properties.
Real
kefir
can
be
produced
only
by
traditional
methods
at
home
and
only
from
original
grains.
These
original
grains,
slightly
yellowish
"cauliflower"
like
things,
are
cca
5000
years
old
bacterial
culture
originating
either
from
the
Caucasian
Mountains
or
monasteries
in
Tibet.
These
real
kefir
grains
are
complex
symbiotic
colony
containing
more
than
35
probiotic
bacteria
proven
highly
beneficial
to
humans.
Kefir
is
considered
a
nutritious
drink
suitable
for
inclusion
in
special
diets
and
in
the
therapy
of
gastrointestinal
disorders.
Kefir
is
very
similar
to
cultured
buttermilk,
yogurt
and
any
other
fermented
milk.
The
gross
composition
and
caloric
value
are
very
similar
to
that
of
milk,
except
that
about
one-quarter
of
the
5
percent
lactose
will
have
been
converted
to
lactic
acid.
This
will
be
of
benefit
to
lactose-intolerant
persons.
Furthermore,
the
bacteria
contained
in
the
kefir
will
provide
lactase,
the
enzyme
in
short
supply
in
lactose-intolerant
individuals.
In
addition,
kefir
contains
0.01
to
0.1
percent
ethanol
and
1
percent
titratable
acidity.
Wherever
available
in
the
world,
kefir
is
considered
an
aid
in
the
therapy
of
gastro-intestinal
disorders.
Evidence
of
success
in
such
treatment
is
largely
based
on
centuries
of
anecdotal
observations.
Kefir
organisms
have
not
been
widely
studied,
and
controlled
studies
with
kefir
and
consumers
have
not
been
conducted.
The
organisms
that
have
received
the
most
attention
by
health
scientists
are
Lactobacillus
acidophilus
and
Bifidobacterium
bifidum.
These
organisms
appear
to
have
several
effects
including:
better
lactose
digestion,
control
of
pathogenic
or
otherwise
undesirable
intestinal
microorganisms,
reduction
in
blood
serum
cholesterol,
reduction
in
colon
carcinogens,
and
immune
system
stimulation
to
resist
infections.
ORGANIC
KOMBUCHA

Probiotic
for
intestinal

For

is
a
Healthy
Kombucha
Fungus
with
kombucha
tea
to
make
your
own
kombucha
tea
at
home.
Kombucha
(kom-boo-cha)
is
a
fermented
tea
that
works
as
a
total
body
tonic.
It
cleanses
your
body
and
has
been
used
to assist
the
body
in
clearing
up a
variety
of
different
disorders.
It
is
a
delicious,
sparkling
beverage
and
is
very
easy
to
make.
You
will
need
a
culture
to
start
with,
which
is
often
referred
to
as
a
mushroom,
but
it should
be
called
a
SCOBY,
which stands
for
symbiotic
colony
of
bacteria
and
yeast. (It
is
an
interesting
thing
to
look
at...It
looks
like
a
little
gelatinous
pancake).
You
brew
1
litre
of
organic
green
or
black
tea
and
add
1/4
cup
of
sugar.
When
the
tea
has
cooled,
you
add
your
culture
and
put
it
in
a
dark,
cool
place
to
sit
undisturbed
for
about
seven
to
ten
days.
You
will
have
two
cultures
when
this
process
is
complete,
one
to
start
a
new
batch,
and
one
to
give
away.
Remove
the
culture
and
place
the
tea
in
the
refrigerator.
Start
slow
with
this
stuff
because
it
is
such
a
powerful
body
detoxifier.
I
advise
people
to
begin
with
just
one
to
two
ounces
per
day
and
work
up
to
two
or
three
glasses
of
tea
per
day
(6
to
8
oz
glasses).
Once
you
get
started
with
kombucha,
you
will
want
to
experiment
with
all
kinds
of
different
ideas!
Strong,
medicinal
teas
can
be
made
by
using
this
fermentation
method.
The
fermentation
process
digests
more
of
the
herb
and
allows
more
of
the
properties
to
be
released
into
the
tea.
Many
claims
have
been
made
regarding
this
tea.
While
the
health
benefits
are
many,
I
would
caution
anyone
from
depending
on
this
tea
to
cure
them
of
all
that
ails
them.
However,
when
kombucha
tea
is
taken
in
moderation
as
a
part
of
a
well-balanced
whole
foods
diet,
you
will
be
pleasantly
surprised
at
the
consequences
it
will
have
on
your
health.
The
primary
benefit
of
drinking
this
tea
is
the
wonderful
cleansing
effect
it
has.
It
detoxifies
the
blood
and
cleanses
the
intestinal
tract.
It
can
help
to
restore
balance
and
support
to
the
immune
system
which
will,
in
turn,
encourage
the
body
to
heal
itself.
You
should
notice
an
improvement
in
your
overall
health
and
your
energy
levels
should
begin
to
increase
within
2
to
4
weeks
of
drinking
kombucha.
It
will
begin
to
restore
your
intestinal
flora
to
a
proper
balance
and
should
eliminate
any
yeast
overgrowth.
It
is
also
very
refreshing
and
quite
enjoyable
as
a
beverage.
